Linda over at Practical Parsimony asked about the above so here are some pictures I took from the Internet.
Spinach Roots are as above. The pointed tips are cut off and the rest is used. The second shows a platter of sauteed roots. I cook it in a different manner and I tend to cook them more.
These are Earth Apples or Jerusalem Artichokes or Sunroots. I peel them and cook them with sauteed onions.
Thanks. I had no idea. I did know Jerusalem artichokes and Sunroots were the same.

ReplyDeleteThey taste nothing like the real artichokes but they are sweet. I am sure you would like them. I cook them in olive oil with sauteed onions. I sprinkle a bit of rice while cooking. It must not come out very juicy. Just a little. The rice helps that. You can either squeeze a bit lemon juice before you eat them or serve with plain yogurt.
